Stéphane Dahirel, a chicken farmer who wants to reduce his farm's carbon footprint and be more environmentally virtuous, is aiming to "produce the best meat possible, in the shortest time possible and with the least amount of feed possible". To find out which animal protein to put on his plate, Pierre-Marie Aubert, a specialist in agricultural practices at IDDRI, advises us "not to focus solely on carbon" but to look at "the use of land, the management of natural resources, water and soil" for each type of livestock farming.
