Rising temperatures and increased droughts have made Europe's hop harvests increasingly unpredictable, lowering yields. Hop plants are prized for giving beer its unique aroma and crisp, refreshing bitterness. In Galicia, Spanish startup Ekonoke is running a unique indoor farming project offering an alternative way to cultivate this climate-vulnerable crop. "We're just very advanced farmers, we're putting a lot of science and technology into the farming (...) but we're not threatening hop farmers, climate change is threatening hop farmers," says Ines Sagrario, Ekonoke's chief executive.
