In Jordan, a traditional dish finds its roots in ancient history and remains a cherished symbol of hospitality, most recently added to UNESCO's intangible cultural heritage list. Jordanian 'mansaf', the kingdom's national dish of lamb cooked in dried yogurt and served with rice and nuts, "is the best", according to Ashraf Mubaideen who co-owns a traditional restaurant in the capital Amman.
